Yellow Rice

Ingredients

  • 1 large onion, chopped small
  • 4 cloves garlic, chopped
  • 2 T. butter
  • additional olive oil, as needed
  • 2 t. tumeric
  • 2 t. adobo seasoning
  • 2 c. brown rice
  • 4 c. vegetable stock
  • 1/2 c. water, or more as needed

Directions

  • In a large soup pan, cook the onions in the butter until well cooked (add olive oil as needed if it seems too dry). Add the garlic and cook briefly. Add the spices and stir to coat the onions. Add the rice and stir until coated with butter. Add the vegetable stock and water.
  • Bring the rice to a boil. Cover, and reduce heat to a simmer. Simmer for 20-30 min. until rice is done. Add additional water during the cooking time if needed.
