Vegetable Super-Stock

Ingredients

  • 1 large yellow onion, peeled and thickly sliced
  • 2 large carrots, left unpeeled and cut into 1-inch chunks
  • 1 large potato, left unpeeled and cut into 1-inch chunks
  • 1 large parsnip, peeled and cut into 1-inch chunks
  • 1 celery rib, cut into 1-inch pieces
  • 3 garlic cloves, left unpeeled and crushed
  • salt and freshly ground pepper
  • handful of thyme sprigs
  • 4 dried mushrooms, soaked in 1 c. hot water until softened
  • 2 bay leaves
  • 1/2 t. black peppercorns
  • 1 T. soy sauce
  • 7 c. water

Directions

  • Preheat oven to 450 degrees.
  • Pour 1 c. boiling water over dried mushrooms and let sit for 30 min.
  • Roast vegetables (onion through garlic) in oven for 30 min.
  • Place roasted vegetables, softened mushrooms (plus soaking liquid), bay leaves, peppercorns, salt and pepper, thyme, and 7 c. water in crockpot.
  • Cook on Low for 8-12 hours.
