Vegetable Super-Stock
Ingredients
- 1 large yellow onion, peeled and thickly sliced
- 2 large carrots, left unpeeled and cut into 1-inch chunks
- 1 large potato, left unpeeled and cut into 1-inch chunks
- 1 large parsnip, peeled and cut into 1-inch chunks
- 1 celery rib, cut into 1-inch pieces
- 3 garlic cloves, left unpeeled and crushed
- salt and freshly ground pepper
- handful of thyme sprigs
- 4 dried mushrooms, soaked in 1 c. hot water until softened
- 2 bay leaves
- 1/2 t. black peppercorns
- 1 T. soy sauce
- 7 c. water
Directions
- Preheat oven to 450 degrees.
- Pour 1 c. boiling water over dried mushrooms and let sit for 30 min.
- Roast vegetables (onion through garlic) in oven for 30 min.
- Place roasted vegetables, softened mushrooms (plus soaking liquid), bay leaves, peppercorns, salt and pepper, thyme, and 7 c. water in crockpot.
- Cook on Low for 8-12 hours.
