Tomato Basil Orzo Soup
Ingredients
- 1 large onion, diced
- 1 c. diced celery
- 1 T. olive oil
- 3 cloves garlic, chopped
- 1 can (28 oz) diced tomatoes
- 1 can (28 oz.) coarse ground tomatoes
- 1 jar (16 oz.) roasted red peppers, diced
- 4 c. vegetable stock
- salt and freshly ground pepper to taste
- 1 c. cream
- 1 c. finely shredded fresh basil
- 1 c. orzo pasta
Directions
- Cook onions until well-cooked. Add celery and continue cooking until onions are browned and celery is cooked. Add garlic and cook for 30 seconds.
- Put onion, celery and garlic mixture in a crockpot. Add diced tomatoes, coarse ground tomatoes, diced red pepper and vegetable stock to the crockpot and cook on low for 4 hours.
- After 4 hours, cook the orzo.
- Blend soup with an immersion blender. Warm the cream and add it to the soup. Add the basil and orzo and serve.
