Tomato Basil Orzo Soup

Ingredients

  • 1 large onion, diced
  • 1 c. diced celery
  • 1 T. olive oil
  • 3 cloves garlic, chopped
  • 1 can (28 oz) diced tomatoes
  • 1 can (28 oz.) coarse ground tomatoes
  • 1 jar (16 oz.) roasted red peppers, diced
  • 4 c. vegetable stock
  • salt and freshly ground pepper to taste
  • 1 c. cream
  • 1 c. finely shredded fresh basil
  • 1 c. orzo pasta

Directions

  1. Cook onions until well-cooked. Add celery and continue cooking until onions are browned and celery is cooked. Add garlic and cook for 30 seconds.
  2. Put onion, celery and garlic mixture in a crockpot. Add diced tomatoes, coarse ground tomatoes, diced red pepper and vegetable stock to the crockpot and cook on low for 4 hours.
  3. After 4 hours, cook the orzo.
  4. Blend soup with an immersion blender. Warm the cream and add it to the soup. Add the basil and orzo and serve.
