Sriracha Chex Mix

Ingredients

  • 3 c. Corn Chex
  • 3 c. Rice Chex
  • 1 c. pretzels
  • 1 c. peanuts
  • 1 c. crunchy chow mein noodles
  • 1/4 c. butter
  • 1/4 c. sriracha
  • 2 T. soy sauce
  • 1 t. grated ginger
  • 1 t. grated garlic
  • 1 c. wasabi peas

Directions

  • Preheat the oven to 250º degrees F.
  • Mix all the dry ingredients together (Corn Chex - chow mein noodles) in a large bowl.
  • Melt butter in the microwave. Stir in the sriracha, soy sauce, garlic and ginger. Pour the butter mixture over the dry ingredients.
  • Spread the Chex Mix in a single layer on two baking trays. Bake for an hour, stirring every 15 min., until crunchy and flavorful. Allow to cool and then mix in the wasabi peas. Store in a closed container at room temperature.

Variations

  • Sriracha Honey-Roasted Peanuts: Make up half of the butter mixture (2 T. butter, 2 T. sriracha, 1 T. soy sauce, 1/2 t. ginger, 1/2 t. garlic) and pour it over 1 jarful of honey roasted peanuts. Bake at 250º F for ~45 minutes, stirring every 15 min. Allow to cool and then return to the container to store.
