Spinach Balls
(makes 60)
Ingredients
- 2 10 oz pkgs frozen spinach - cook and drain 1)
Add to:
- 1 medium onion, chopped fine
- 1/2 c. parmesan
- 4 beaten eggs
- 3/4 c. melted butter
- 1/2 t. salt
- 1/2 t. garlic 4)
Directions
Mix well. Refrigerate overnight (an hour or longer)
- Form 1-inch balls on ungreased cookie sheets.
- Bake 350 degrees for 20-25 minutes.
- These freeze well. Microwave 3-5 minutes to serve.

alternatively, 1 pkg frozen spinach + 1 pkg frozen broccoli, chopped small

Stove Top brand Stuffing Mix for Pork contains no meat or chicken broth

If making this with homemade bread cubes, add 1/2 T. poultry seasoning and 1 T. minced dried onion to the mix.
