Spinach Balls

(makes 60)

Ingredients

  • 2 10 oz pkgs frozen spinach - cook and drain 1)

Add to:

  • 1 medium onion, chopped fine
  • 2 c. (6 oz. package) prepared dry stuffing 2) 3)
  • 1/2 c. parmesan
  • 4 beaten eggs
  • 3/4 c. melted butter
  • 1/2 t. salt
  • 1/2 t. garlic 4)

Directions

Mix well. Refrigerate overnight (an hour or longer)

  • Form 1-inch balls on ungreased cookie sheets.
  • Bake 350 degrees for 20-25 minutes.
  • These freeze well. Microwave 3-5 minutes to serve.

Notes

1)
alternatively, 1 pkg frozen spinach + 1 pkg frozen broccoli, chopped small

Stove Top brand Stuffing Mix for Pork contains no meat or chicken broth

If making this with homemade bread cubes, add 1/2 T. poultry seasoning and 1 T. minced dried onion to the mix.
