Spiced Sweet Potatoes with Chestnuts

Ingredients

  • 3 pounds whole unpeeled sweet potatoes (common orange-skinned sweet variety; also known as yams)
  • 8 tablespoons (1 stick) unsalted butter
  • 16-ounce can chestnut purée or 1 lb. roasted chestnuts, ground in food processor 1)
  • 5 tablespoons (a little under 1/3 cup2)) packed dark brown sugar
  • 1 1/2 teaspoons salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg

Directions

  • Preheat oven to 400 degrees F.
  • Bake sweet potatoes in small (8×8-inch) baking pan until very tender, about 1 hour.
  • Reduce temperature to 375 degrees F.
  • Cool sweet potatoes slightly. Peel skins from sweet potatoes. Puree sweet potatoes through food mill and into large bowl.
  • Mix 6 tablespoons butter into sweet potatoes. Add chestnut purée, 3 tablespoons brown sugar and next 5 ingredients; mash until smooth.
  • Spoon sweet potato mixture into prepared dish. (Can be made 1 day ahead. Cover and refrigerate. Return to room temperature before baking.)
  • Dot top of sweet potatoes with remaining 2 tablespoons butter. Sprinkle with remaining 2 tablespoons brown sugar. Bake until heated through and bubbly, about 30 minutes.

Because of the price of puréed or canned chestnuts in the grocery, we've been roasting them ourselves. However, more recently, we found that the local oriental food store carries vacuum packed cooked chestnuts at about the same price per pound as buying them raw.
