Snickerdoodles
Ingredients
- 1 1/2 c. sugar
- 2 sticks dairy-free margarine
- 2 t. egg replacer (equivalent to 2 eggs)
- 4 T. water
- 2 3/4 c. flour
- 2 t. cream of tartar
- 1 t. baking soda
- 1/4 t. salt
- 2 T. sugar
- 2 t. cinnamon
Directions
- Preheat oven to 400º F
- Cream together margarine and 1 1/2 c. sugar. Add egg replacer and water and beat until combined. Add flour, cream of tartar, baking soda and salt, and mix until well-combined (dough will form a ball).
- Mix together 2 T. sugar and 2 t. cinnamon in a small bowl. Scoop out cookie batter with a teaspoon and roll into balls. Roll balls in cinnamon sugar mixture and place balls on a cookie sheet lined with parchment paper. Bake for 8 min., rotating front-to-bak and top-to-bottom halfway through the cooking process. Remove from cookie sheets immediately to cool on wire racks.
