Smoky Bean Soup
Ingredients
- 1 medium onion, chopped
- 1 red bell pepper chopped
- 1 lb. potatoes, cubed
- 4 c. veggie broth
- 3 cans canelli beans (or other white beans)
- 1 can corn
- 1 c. milk
- 1 t. ground cumin
- 3 oz. smoked gouda (or other smoked cheese), grated
Directions
Cook onion in olive oil in large soup pot until tender. Add red pepper and cook until softened. Add potatoes and broth and bring liquid to a boil. Reduce heat to medium and simmer until potatoes are tender, about 10 minutes.
Add beans, corn, milk, and cumin. Simmer for 5 more minutes, until beans and corn are heated through.
Remove from heat. Stir in cheese and serve. Serves 4.
For Christmas dinner, should probably double this.
