Rum Date Coconut Muffins
Ingredients
- 2 c. flour
- 1/2 c. sugar
- 1/4 c. brown sugar
- 1 T. baking powder
- 1/2 t. cinnamon
- 1/2 t. salt
- 1 1/2 c. chopped dates
- 3/4 c. coconut
- 2/3 c. coconut milk
- 1/3 c. rum
- 1/4 c. olive oil
- 2 t. vanilla
- 2 t. egg replacer (equivalent to 1 egg)
- 2 T. water
Directions
- Preheat oven to 400º F.
- Combine the dry ingredients (flour, sugar, brown sugar, baking powder, cinnamon, salt) in a large bowl. Stir in the dates and the coconut.
- Combine the wet ingredients (coconut milk, rum, olive oil, vanilla, egg replacer, water) in a small bowl. Pour into the dry ingredients and stir just until combined.
- Pour into muffin pans lined with muffin papers and bake for 20-25 min.
