Rum Date Coconut Muffins

Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 1/4 c. brown sugar
  • 1 T. baking powder
  • 1/2 t. cinnamon
  • 1/2 t. salt
  • 1 1/2 c. chopped dates
  • 3/4 c. coconut
  • 2/3 c. coconut milk
  • 1/3 c. rum
  • 1/4 c. olive oil
  • 2 t. vanilla
  • 2 t. egg replacer (equivalent to 1 egg)
  • 2 T. water

Directions

  • Preheat oven to 400º F.
  • Combine the dry ingredients (flour, sugar, brown sugar, baking powder, cinnamon, salt) in a large bowl. Stir in the dates and the coconut.
  • Combine the wet ingredients (coconut milk, rum, olive oil, vanilla, egg replacer, water) in a small bowl. Pour into the dry ingredients and stir just until combined.
  • Pour into muffin pans lined with muffin papers and bake for 20-25 min.

  • Can also use 1 1/2 c. white flour and 1/2 c. whole wheat flour
