Rosemary Roasted Red Pepper Muffins
Ingredients
- 1 c. whole wheat flour
- 1 1/2 c. white flour
- 1 1/2 t. baking powder
- 1 t. baking soda
- 1/4 t. salt
- 2 T. fresh rosemary, coarsely shopped
- 1/2 c. roasted red peppers, chopped
- 6 oz. onion and chive flavored cream cheese
- 1 1/4 c. milk
- 1 T. olive oil
- 1 egg
Directions
- Preheat oven to 400º F.
- Mix together the dry ingredients (whole wheat flour, white flour, baking powder, baking soda, salt) in a large bowl. Add rosemary and red pepper and stir to coat.
- Mix together the wet ingredients (cream cheese, milk, olive oil, egg) in a food processor until well combined. Pour into the dry mixture and stir just until combined.
- Spoon into muffin pans lined with muffin papers and bake for 15-20 min.
