Rosemary Roasted Red Pepper Muffins

Ingredients

  • 1 c. whole wheat flour
  • 1 1/2 c. white flour
  • 1 1/2 t. baking powder
  • 1 t. baking soda
  • 1/4 t. salt
  • 2 T. fresh rosemary, coarsely shopped
  • 1/2 c. roasted red peppers, chopped
  • 6 oz. onion and chive flavored cream cheese
  • 1 1/4 c. milk
  • 1 T. olive oil
  • 1 egg

Directions

  • Preheat oven to 400º F.
  • Mix together the dry ingredients (whole wheat flour, white flour, baking powder, baking soda, salt) in a large bowl. Add rosemary and red pepper and stir to coat.
  • Mix together the wet ingredients (cream cheese, milk, olive oil, egg) in a food processor until well combined. Pour into the dry mixture and stir just until combined.
  • Spoon into muffin pans lined with muffin papers and bake for 15-20 min.
