Vegan Pumpkin Pecan Chocolate Chip Muffins

Ingredients

  • 3/4 c. rice flour
  • 1/2 c. potato flour
  • 1/4 c. tapioca flour (tapioca starch)
  • 1/2 t. baking soda
  • 1/4 t. baking powder
  • 1 1/2 t. pumpkin pie spice
  • 1/2 c. chopped pecans
  • 1 c. chocolate chips
  • 1 c. pumpkin
  • 1/2 c. olive oil
  • 1/2 c. rice milk
  • 1 t. egg substitute
  • 2 T. water

Directions

  • Preheat oven to 400º F.
  • Mix together dry ingredients (gluten free flour, sugar, baking soda, baking powder, pumpkin pie spice). Stir in the chocolate chips and pecans.
  • Mix together the wet ingredients (pumpkin, oil, egg substitute and water). Add to the dry ingredients and stir until just combined.
  • Pour into muffin tins lined with muffin papers and bake for 20-25 min.
