Vegan Pumpkin Pecan Chocolate Chip Muffins
Ingredients
- 3/4 c. rice flour
- 1/2 c. potato flour
- 1/4 c. tapioca flour (tapioca starch)
- 1/2 t. baking soda
- 1/4 t. baking powder
- 1 1/2 t. pumpkin pie spice
- 1/2 c. chopped pecans
- 1 c. chocolate chips
- 1 c. pumpkin
- 1/2 c. olive oil
- 1/2 c. rice milk
- 1 t. egg substitute
- 2 T. water
Directions
- Preheat oven to 400º F.
- Mix together dry ingredients (gluten free flour, sugar, baking soda, baking powder, pumpkin pie spice). Stir in the chocolate chips and pecans.
- Mix together the wet ingredients (pumpkin, oil, egg substitute and water). Add to the dry ingredients and stir until just combined.
- Pour into muffin tins lined with muffin papers and bake for 20-25 min.
