Pasta Salad With Sun-dried Tomatoes, Mozzarella, and Olives

Ingredients

  • 2 c. halved red and yellow cherry tomatoes
  • 8 oz. fresh water-packed mozzarella, drained and cut into 1/2-inch pieces
  • 1 c fresh basil leaves, thinly sliced
  • 1/2 c. grated parmesan
  • 1/2 c. chopped kalmata olives (approx. 20 olives)
  • 1 lb. gnocchi pasta

Dressing

  • 6 T. olive oil
  • 1/2 c. oil-packed sun-dried tomatoes
  • 1/4 c. balsamic vinegar
  • 1 T. capers
  • 1 clove garlic, minced

Directions

  • Bring large pot of water to boil. Cook pasta until just tender.
  • In food processor, make dressing combining all ingredients until sun-dried tomotoes coarsely chopped.
  • Transfer to small bowl and set aside.
  • Drain pasta and add to dressing while hot. Let cool stirring occasionally.
  • Add tomotoes, mozzarella, basil, Parmesan and olives. Season with salt and pepper.
  • Toss to serve at room temperature.
