Panang Curry
Ingredients
- 1 15 oz package tofu, cubed
- 1 15 oz can coconut milk
- 4 oz can panang curry paste (brand: Maesri)
- 1 T soy sauce
- 1 c peas
- 7 kaffir lime leaves (optional)
- 1/2 c fresh sweet basil leaves (optional)
Directions
- Put coconut milk into saucepan.
- Whisk in curry paste and soy sauce.
- Add tofu.
- Heat on low until heated through.
- Add in peas and heat until peas are cooked.
- If available, add in lime leaves and basil, reserving some for a garnish.
- Serve over rice.
