Menu Notes: January 1-7, 2011
Pesto-Infused White Bean and Sun-Dried Tomato Stew

Notes:
- Super-easy and delicious
- Cooking time on recipe says: 6-8 hours on low. Easily ready in 6 hours but will hold for an hour or two.
- Recipe calls for beans to be added at the beginning of the cooking time. Beans were VERY soft. Experiment with adding beans at the end, for less mushy beans? (Soft beans were not bad, but might be better otherwise)
- Added 1/3 of a recipe of homemade pesto. Seemed like enough but was less than the recipe called for
- Added 2 cloves of garlic. Duh

Chipotle-Potato Soup with Leeks

Notes:
- Super-easy and delicious – the chipotle flavor in the potato soup was a nice surprise
- Cooking time on recipe says: 6-8 hours on low. Easily ready in 6 hours but will hold for an hour or two.
- Recipe calls for 1-2 chipotles. I put in 3. This was too much. Try 1 next time, possibly with a little sauce. Just need the flavor of the chipotles, not the heat.
- Recipe called the leeks to be softened in the crockpot on high before adding the rest of the ingredients. Instead, I cooked the leeks a bit in the cast iron skillet and then added everything together. Also, the recipe said to only do half of the leeks that way, and to reserve the other half to “frizzle” and add as a topping. I just did all the leeks together – too fussy, for too little return

Wild Mushroom Risotto

Notes:
- Pretty easy
- Cooking time on recipe says: 2 hours on high. Overdid it – cooked it more than two hours. Does not sit well – stuck to sides of pan and seemed a little overdone. Not burned, however, and still highly edible. Next time, keep a closer watch on it, and serve promptly after two hours.
- Cooked the shallots and garlic in the skillet as called for. Then added the wine to the skillet and cooked until evaporated. Added the rice and stirred briefly in the skillet before transferring everything to the crockpot
- Used grated Asiago cheese rather than Parmesan
Make again?
- Yes, I want to try this again, although I'm not convinced that it turns out as well as my skillet-in-the-oven method, which is just about as easy (can't quite walk-away-and-leave-it, but close)
