Hoisin-Ginger Tofu and Veggies
Ingredients
Hoisin-Ginger Glaze
- 1/2 c. hoisin sauce
- 3 garlic cloves
- 1 T. sesame oil
- 1 T. soy sauce
- 2 T. chopped fresh ginger
- 1 T. rice vinegar
- 1/8 t. cayenne
Tofu and Veggies
- 1 package firm tofu (15 oz.)
- 3 c. broccoli florets
- 1 red pepper, chopped
- 1 bunch scallions
- 1 T. olive oil
- 1 T. sesame oil
- 3 c. cooked brown rice
Directions
- Cook rice.
- Mix together glaze ingredients.
- Cut tofu into bite-sized pieces and place in glass backing dish. Pour glaze over tofu and allow to sit for 30 min. Bake @350 deg F for 20 min.
- Prep veggies:
- Cut broccoli into florets and microwave for 5 min.
- Chop peppers and scallions and place in separate bowls
- When rice is cooked and tofu is baked, quickly stir-fry broccoli and peppers in wok. Add rice, tofu and marinade, and scallions to vegetable mixture. Stir to combine.
