Hoisin-Ginger Tofu and Veggies

Ingredients

Hoisin-Ginger Glaze

  • 1/2 c. hoisin sauce
  • 3 garlic cloves
  • 1 T. sesame oil
  • 1 T. soy sauce
  • 2 T. chopped fresh ginger
  • 1 T. rice vinegar
  • 1/8 t. cayenne

Tofu and Veggies

  • 1 package firm tofu (15 oz.)
  • 3 c. broccoli florets
  • 1 red pepper, chopped
  • 1 bunch scallions
  • 1 T. olive oil
  • 1 T. sesame oil
  • 3 c. cooked brown rice

Directions

  • Cook rice.
  • Mix together glaze ingredients.
  • Cut tofu into bite-sized pieces and place in glass backing dish. Pour glaze over tofu and allow to sit for 30 min. Bake @350 deg F for 20 min.
  • Prep veggies:
    • Cut broccoli into florets and microwave for 5 min.
    • Chop peppers and scallions and place in separate bowls
  • When rice is cooked and tofu is baked, quickly stir-fry broccoli and peppers in wok. Add rice, tofu and marinade, and scallions to vegetable mixture. Stir to combine.

    • Tofu: 20 min. in oven
    • Veggies: 5 min. to stir-fry in wok
