Half Day Ratatoullie

Ingredients

  • 2 T. olive oil
  • 1 small eggplant, cut into 1/2-inch dice
  • 1 small onion, diced
  • 1 small red pepper, diced
  • 2 garlic cloves, minced
  • 2 small zucchini, cut into 1/2-inch rounds
  • 1 28 oz. can diced tomatoes, undrained
  • 1 t. dried thyme
  • salt and pepper
  • 3 T. pesto

Directions

  • Saute eggplant in 1 T. oil over med. heat until softened (~5 min). Using slotted spoon, transfer eggplant to crockpot.
  • Saute onion in remaining T. of oil until brown. Add garlic and cook briefly.
  • Place onion and garlic in crockpot. Add bell pepper, zucchini. tomatoes (plus liquid) and thyme. Add salt and pepper to taste.
  • Cook on Low for 4 hours until vegetables are tender
  • Just before serving, stir in the pesto.
