Half Day Ratatoullie
Ingredients
- 2 T. olive oil
- 1 small eggplant, cut into 1/2-inch dice
- 1 small onion, diced
- 1 small red pepper, diced
- 2 garlic cloves, minced
- 2 small zucchini, cut into 1/2-inch rounds
- 1 28 oz. can diced tomatoes, undrained
- 1 t. dried thyme
- salt and pepper
- 3 T. pesto
Directions
- Saute eggplant in 1 T. oil over med. heat until softened (~5 min). Using slotted spoon, transfer eggplant to crockpot.
- Saute onion in remaining T. of oil until brown. Add garlic and cook briefly.
- Place onion and garlic in crockpot. Add bell pepper, zucchini. tomatoes (plus liquid) and thyme. Add salt and pepper to taste.
- Cook on Low for 4 hours until vegetables are tender
- Just before serving, stir in the pesto.
