Gluten Free Pecan Pie Muffins
Ingredients
- 3/4 c. gluten-free flour
- 1 1/2 c. chopped pecans
- 1 c. brown sugar, packed
- 1 c. butter, melted and cooled
- 3 eggs
Directions
* Preheat the oven to 350 deg F. * In a large bowl, mix together the dry ingredients (flour, pecans and brown sugar). * Add the melted butter to the dry ingredients and stir until combined. Whisk the eggs and then add them to the batter, stirring until combined. * Spoon the batter into muffin tins lined with muffin papers. Bake for 25-30 min.
