Gluten Free Pecan Pie Muffins
Ingredients
- 3/4 c. gluten-free flour
- 1 1/2 c. chopped pecans
- 1 c. brown sugar, packed
- 1 c, butter, melted and cooled
- 3 eggs
Directions
* Preheat the oven to 350 deg F. * In a large bowl, mix together the dry ingredients (flour, pecans and brown sugar). Add the melted butter to the dry ingredients and stir until combined. Whisk the eggs and then add them to the batter, stirring until combined. * Spoon the batter into muffin tins lined with muffin papers. Bake for 25-30 min.
