Ginger Cardamom Pear Pancakes
Ingredients
- 1 c. white whole wheat flour
- 2 t. baking powder
- 1/2 t. salt
- 1 t. ground ginger
- 1 T. ground cardamom
- 1 c. almond milk
- 2 T. olive oil
- 1 egg
- 1 t. ginger paste
- 1 ripe pear, grated
- 1/4 c. ground pecans (optional)
Directions
- In a medium-sized bowl, mix together the dry ingredients (flour, baking powder, salt, ground ginger, and cardamom).
- In a 2 cup mixing cup, whisk together the wet ingredients (almond milk, olive oil, egg, ginger paste). Pour into dry ingredients and whisk until well combined.
- Grate the pear into the bowl (it's fine to leave the skin on). Stir the pear into the batter until it is well combined. Add more liquid (almond milk or water) until batter is desired consistency.
- Cook pancakes in a cast iron skillet.
- Serve with plain greek yogurt and jam
Notes
- You could also make this with regular white flour, or regular wheat flour, or a combination of both. Whatever you have would likely be fine. Same goes for the milk: you could use regular cow's milk, oat milk, or even rice milk. It seems like a very forgiving recipe.
- I haven't tried this, but this should work as a gluten-free recipe. I would use either a 1-to-1 gluten free flour or oat flour or possibly rice flour. I would not use any kind of nut flour, but who knows that might also work. As I said, these pancakes seem pretty forgiving.
- I haven't tried this, but you should be able to make these vegan by using vegan egg substitute equivalent to one egg
