Easy Tomato Soup
Ingredients
- 3 T. butter
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 T. flour
- 64 oz can tomato juice
- 1 can diced tomatoes, undrained
- 3 c. milk
- 3 t. sugar
- salt and pepper to taste
Directions
- Melt butter in 5 qt. soup pot.
- Add onion and cook over medium heat till soft. Add garlic and cook for 30 seconds. Sprinkle flour over onions and garlic and stir until flour coats the onion/garlic mixture.
- Gradually add tomato juice, whisking to blend. Add the canned tomatoes. Stir in milk. Season with sugar, salt, and pepper. Heat to warm, but do not let boil. Serve immediately.
