Double Ginger Ginger Muffins

Ingredients

  • 1 c. whole wheat flour
  • 1 c. white flour
  • 1/2 c. brown rice flour
  • 1 1/2 t. baking soda
  • 1 t. baking powder
  • 1 T. ground ginger
  • 3/4 t. ground cinnamon
  • 1/2 t. ground nutmeg
  • 1/4 t. salt
  • 3 T. chopped crystallized ginger
  • 1/2 c. golden raisins
  • 1 T. grated orange peel
  • 1 c. milk
  • 1/2 c. water
  • 1/4 c. honey
  • 1/4 c. molasses
  • 2 egg whites

Directions

  • Whisk together milk, water, honey, molasses and egg whites in a small bowl.
  • Combine first twelve ingredients (whole wheat flour - orange peel) in a large bowl. Make a well in the center and pour in the wet ingredients. Stir just until mixed.
  • Spoon into greased muffin tin (makes ~12 muffins) and bake at 400º F for 15-20 min. Allow to cool in the pan for 10 min. before removing from pan.
