Double Ginger Ginger Muffins
Ingredients
- 1 c. whole wheat flour
- 1 c. white flour
- 1/2 c. brown rice flour
- 1 1/2 t. baking soda
- 1 t. baking powder
- 1 T. ground ginger
- 3/4 t. ground cinnamon
- 1/2 t. ground nutmeg
- 1/4 t. salt
- 3 T. chopped crystallized ginger
- 1/2 c. golden raisins
- 1 T. grated orange peel
- 1 c. milk
- 1/2 c. water
- 1/4 c. honey
- 1/4 c. molasses
- 2 egg whites
Directions
- Whisk together milk, water, honey, molasses and egg whites in a small bowl.
- Combine first twelve ingredients (whole wheat flour - orange peel) in a large bowl. Make a well in the center and pour in the wet ingredients. Stir just until mixed.
- Spoon into greased muffin tin (makes ~12 muffins) and bake at 400º F for 15-20 min. Allow to cool in the pan for 10 min. before removing from pan.
