Double Fudge Banana Muffins
Ingredients
- 1 1/2 c. flour
- 6 T. cocoa powder
- 6 T. brown sugar
- 3/4 t. baking soda
- 3/4 t. baking powder
- 1/2 t. salt
- 1 c. chocolate chips
- 4 bananas
- 1/2 c. unsweetened applesauce
- 1/2 T. vanilla
- 1 1/2 t. egg replacer (equivalent to 1 egg)
- 2 T. water
Directions
- Preheat oven to 350º F.
- Mix together the dry ingredients (flour - chocolate chips) in a large bowl.
- In a food processor, blend together the bananas and the rest of the wet ingredients (applesauce, vanilla, egg replacer and water). Pour the wet ingredients into the dry ingredients and stir until just mixed.
- Pour muffin batter into muffin tins lined with muffin papers. Bake for 25-30 min.
