Devil's Food Cake
Ingredients
- 1 c. hot brewed coffee 1)
- 1/2 c. unsweetened cocoa powder (Dutch process not necessary)
- 1/2 c. unsalted butter or vegetable shortening
- 11/2 c. sugar
- 2 eggs, room temperature
- 1 t. vanilla
- 11/2 c. cake flour
- 1/2 t. salt
- 1/4 t. baking powder
- 1 t. baking soda
Directions
- Preheat oven to 350 degrees.
- Grease and flour two 8-inch round cake pans.
- Add the cocoa powder to the coffee and mix until smooth.
- In a large mixing bowl, combine butter, sugar, eggs and vanilla, beating for about one minute until mixture is light and fluffy.
- Sift dry ingredients together in a bowl.
- Add dry ingredients to the butter mixture alternately with the coffee/cocoa liquid, in several additions.
- Pour the batter into the pans and bake for 25 minutes or until a cake tester comes out clean. Be careful not to overbake.
- Cool cakes in pans for a few minutes then turn out of the pans on to racks to cool completely.
- Frost with fudge frosting.

Don't let the cup of coffee scare you. The finished cake will not have any coffee flavor and will just be deep, dark and chocolaty.
