Date Pecan Granola

Ingredients

  • 4 c. gluten-free oats (Golden Prairie brand, certified to less than 5 ppm)
  • 1 c. pecan pieces, coarsely chopped
  • 1 c. dates, coarsely chopped
  • 3/4 t. salt
  • 1/2 t. cinnamon
  • 1/8 t. nutmeg
  • 1/2 c. olive oil
  • 1/2 c. agave

Directions

  • Preheat the oven to 300º F
  • In a large bowl, mix together the oats, pecans, dates, salt, cinnamon and nutmeg.
  • In a measuring cup, combine the olive oil and the agave. Pour this mixture over the oats mixture and stir to coat.
  • Place oat mixture on a baking sheet and roast in the oven for 30 min., stirring every 10 min.
  • Remove from heat and allow to cool in the baking pan on a wire rack until cool. Transfer to an airtight container.
