Date Pecan Granola
Ingredients
- 4 c. gluten-free oats (Golden Prairie brand, certified to less than 5 ppm)
- 1 c. pecan pieces, coarsely chopped
- 1 c. dates, coarsely chopped
- 3/4 t. salt
- 1/2 t. cinnamon
- 1/8 t. nutmeg
- 1/2 c. olive oil
- 1/2 c. agave
Directions
- Preheat the oven to 300º F
- In a large bowl, mix together the oats, pecans, dates, salt, cinnamon and nutmeg.
- In a measuring cup, combine the olive oil and the agave. Pour this mixture over the oats mixture and stir to coat.
- Place oat mixture on a baking sheet and roast in the oven for 30 min., stirring every 10 min.
- Remove from heat and allow to cool in the baking pan on a wire rack until cool. Transfer to an airtight container.
