Confetti Quesadillas

Ingredients

1 c. chopped onion
1 c. corn kernels
2 cloves garlic, chopped
2/3 c. chopped tomato
2 T. minced fresh cilantro
1/4 t. salt
1 c. shredded cheddar or pepper jack cheese
8 tortillas

Directions

Saute onion until browned. Add corn and tomatoes and saute ~2 min. Add garlic and saute briefly. Stir in cilantro and remove from heat.
Place spoonfuls of the corn mixture on one side of a tortilla and top with grated cheese.
Fry quesadillas in skillet, 2 min. per side.
