Coconut Chocolate Chip Muffins
Ingredients
- 2 c. white flour
- 3/4 c. sugar
- 2 t. baking powder
- 1/2 t. baking soda
- 1/2 t. salt
- 2 c. semisweet mini chocolate chips
- 3/4 c. coconut
- 1/2 c. coconut oil, melted
- 3/4 c. coconut milk
- 1 t. lemon juice
- 1 t. vanilla
- 4 t. egg replacer (equivalent to 2 eggs)
- 4 T. water
Directions
- Preheat the oven to 350ºF
- Mix the dry ingredients (flour, sugar, baking powder, baking soda, salt, chocolate chips, coconut) in a large bowl.
- Combine the wet ingredients (coconut oil, coconut milk, lemon juice, egg replacer, water) in a small bowl and add to the dry ingredients. Stir just until combined.
- Pour batter into muffin cups lined with muffin papers and bake for 20-25 min.
