Cinnamon Pecan Sweet Potato Muffins
Ingredients
- 1 3/4 c. flour
- 1/2 c. sugar
- 2 t. baking powder
- 1/2 t. salt
- 1/2 t. cinnamon
- 1/2 t. nutmeg
- grated rind of one orange
- 3/4 c. chopped pecans
- 1 medium sweet potato (~14 oz), baked and pureed
- 1/2 c. milk
- 1/2 c. olive oil
- 2 eggs
- 2 T. sugar
- 1 t. cinnamon
Directions
- Preheat oven to 350º F
- Mix together dry ingredients (flour, sugar, baking powder, salt, cinnamon, nutmeg, orange rind, pecans) in a large bowl.
- Puree sweet potato in a food processor. Add the rest of the wet ingredients (milk, oil, egg) and pulse until combined. Pour wet ingredients into the dry ingredients.
- Pour batter into muffin tins lined with muffin papers. Mix together 2 T. sugar and 1 t. cinnamon and sprinkle on top of muffins. Bake for 20-25 min.
