Cinnamon Pecan Sweet Potato Muffins

Ingredients

  • 1 3/4 c. flour
  • 1/2 c. sugar
  • 2 t. baking powder
  • 1/2 t. salt
  • 1/2 t. cinnamon
  • 1/2 t. nutmeg
  • grated rind of one orange
  • 3/4 c. chopped pecans
  • 1 medium sweet potato (~14 oz), baked and pureed
  • 1/2 c. milk
  • 1/2 c. olive oil
  • 2 eggs
  • 2 T. sugar
  • 1 t. cinnamon

Directions

  • Preheat oven to 350º F
  • Mix together dry ingredients (flour, sugar, baking powder, salt, cinnamon, nutmeg, orange rind, pecans) in a large bowl.
  • Puree sweet potato in a food processor. Add the rest of the wet ingredients (milk, oil, egg) and pulse until combined. Pour wet ingredients into the dry ingredients.
  • Pour batter into muffin tins lined with muffin papers. Mix together 2 T. sugar and 1 t. cinnamon and sprinkle on top of muffins. Bake for 20-25 min.
