Chocolate Chip Cookies
Ingredients
- 1 cup margarine, melted (still warm)
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 t. egg replacer (equivalent to 2 eggs)
- 4 T. water
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chocolate chips
Directions
- Preheat oven to 375º F.
- Melt margarine. In a large mixing bowl, combine sugars and melted margarine until well blended. Add in the vanilla, egg replacer and water and blend until well mixed.
- Measure the flour, baking soda and salt into a large measuring cup. Add to the butter and sugar mixture and stir until well combined. Stir in the chocolate chips.
- Drop by rounded teaspoonfuls onto cookie trays lined with parchment paper. Bake for 8-10 min., depending on desired level of crispness. Allow to cool on the tray for 5 min. before removing to wire rack to cool completely.

- Yield: 42 cookies
- Optional: Add 1 c. chopped nuts along with the chocolate chips. Also, the original recipe says to use 2 c. of chocolate chips, but that seemed like a lot to me. However, if you like your chocolate chip cookies more chocolatey, then by all means go for it!
