Chocolate Almond Muffins
Ingredients
- 1 1/2 c. whole wheat flour
- 1 1/4 c. white flour
- 6 T. cocoa powder
- 1/4 c. brown sugar
- 1 1/2 t. baking soda
- 1 t. baking powder
- 1/4 t. salt
- 3/4 c. chocolate chips
- 1 1/2 c. milk
- 1/2 c. sour cream
- 1/4 c. olive oil
- 1 egg
- 1 t. vanilla
- 1/2 c. sliced almonds
Directions
- Whisk together milk, sour cream, olive oil, egg and vanilla in a small bowl.
- Combine first eight ingredients (whole wheat flour - chocolate chips) in a large bowl. Make a well in the center and pour in the wet ingredients. Stir just until mixed.
- Spoon into greased muffin tin (makes ~12 muffins) and sprinkle the sliced almonds on top. Bake at 400º F for 15-20 min. Allow to cool in the pan for 10 min. before removing from pan.
