Chipotle-Potato Soup with Leeks

Ingredients

  • 2 leeks (white part only), chopped
  • 2 T. olive oil
  • 1 1/2 lbs. Yukon Gold potatoes, peeled and diced
  • 6 cups vegetable stock
  • salt and pepper
  • 1 or 2 canned chipotles in adobo sauce, to taste

Directions

  • Saute leeks in olive oil until soft
  • Place potatoes, leeks and vegetable stock in 4 qt. crockpot. Salt and pepper to taste
  • Cook on Low for 6-8 hours
  • When the potatoes are soft, transfer ~half of the soup to a food processor
  • Add chipotles and blend
  • Return blended soup to the crockpot to combine with the rest of the soup
