Chipotle-Potato Soup with Leeks
Ingredients
- 2 leeks (white part only), chopped
- 2 T. olive oil
- 1 1/2 lbs. Yukon Gold potatoes, peeled and diced
- 6 cups vegetable stock
- salt and pepper
- 1 or 2 canned chipotles in adobo sauce, to taste
Directions
- Saute leeks in olive oil until soft
- Place potatoes, leeks and vegetable stock in 4 qt. crockpot. Salt and pepper to taste
- Cook on Low for 6-8 hours
- When the potatoes are soft, transfer ~half of the soup to a food processor
- Add chipotles and blend
- Return blended soup to the crockpot to combine with the rest of the soup
