Cheddar Cheese Soup
Ingredients
- 1 large onion, chopped
- 1/2 stick butter, melted
- 1/3 c. flour
- 2 1/2 c. vegetable stock
- 2 1/2 c. milk
- salt and pepper
- 2 c. grated cheddar cheese
Directions
- Cook onions in butter. Add flour and cook for 1 min.
- Add veggie stock and milk to onion mixture. Bring to a boil. Simmer for 5 min.
- Season with salt and pepper. Add cheese and stir until melted. Serve immediately.
