Cheddar Cheese Soup

Ingredients

  • 1 large onion, chopped
  • 1/2 stick butter, melted
  • 1/3 c. flour
  • 2 1/2 c. vegetable stock
  • 2 1/2 c. milk
  • salt and pepper
  • 2 c. grated cheddar cheese

Directions

  • Cook onions in butter. Add flour and cook for 1 min.
  • Add veggie stock and milk to onion mixture. Bring to a boil. Simmer for 5 min.
  • Season with salt and pepper. Add cheese and stir until melted. Serve immediately.
