Carrot, Apple and Almond Muffins
Ingredients
- 1 c. white flour
- 1 c. whole wheat flour
- 1 c. brown sugar
- 1 t. baking soda
- 1 t. baking powder
- 1/2 t. salt
- 2 t. cinnamon
- 1/2 t. nutmeg
- 2 1/4 c. grated carrots
- 1/2 c. toasted slivered almonds
- 1 c. applesauce
- 1/4 c. olive oil
- 2 eggs
Directions
- Whisk together applesauce, oil, and eggs in a small bowl.
- Combine first ten ingredients (flour - almonds) in a large bowl. Make a well in the center and pour in the wet ingredients. Stir just until mixed.
- Spoon into greased muffin tin (makes ~12 muffins) and bake at 375º F for 20-25 min. Allow to cool in the pan for 10 min. before removing from pan.
