Cardamom Cake

Ingredients

  • 1 stick butter, softened
  • 2 c. sugar
  • 1 c. milk
  • 1 egg
  • 2 c. flour
  • 2 t. baking powder
  • 1 t. cinnamon
  • 1 T. ground cardamom

Directions

  • Preheat oven to 350º F. Grease and flour a loaf pan and set aside.
  • Cream together butter and sugar in a large mixing bowl. Add milk and egg and blend with mixer until well combined.
  • Measure out the flour. Add baking powder, cinnamon and cardamom to the flour and stir until well combined. Add flour mixture to mixing bowl and mix with mixer until well combined.
  • Pour cake batter into the greased and floured loaf pan and bake for 1 hr.

Variations

  • You could also make this in two mini loaf pans if you wanted to. I imagine it would take less time to cook this way, but I don't know how much less – you would just need to keep an eye on it.
  • I think this could also be made vegan, although I haven't tried it yet. To make it vegan I would use Earth Balance baking sticks instead of the butter, rice milk instead of the milk, and egg replacer instead of the egg.
