Black Bean Lasagne

Ingredients

  • lasagne noodles
  • 1 T. olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 1 c. water
  • 2 15 oz. cans black beans
  • 1 14.5 oz. can chopped tomatoes
  • 1 12 oz. can tomato paste
  • 15 oz. ricotta cheese
  • 2 eggs
  • 1/2 c. grated parmesan
  • 1/4 c. chopped cilantro (optional)
  • 8 oz. shredded pepper jack cheese

Directions

Sauce

  • Cook onion in olive oil until brown. Add garlic and cook briefly.
  • Add water, black beans, tomatoes and tomato paste. Simmer uncovered for 15 min., stirring occasionally.

Ricotta mixture

  • Mix together ricotta, eggs, parmesan. Add cilantro if using.

Lasagna

  • Assemble lasagne by alternating layers of noodles, ricotta, sauce and cheese.
  • Bake at 350 degrees for 50-60 min.
