Black Bean Lasagne
Ingredients
- lasagne noodles
- 1 T. olive oil
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 1 c. water
- 2 15 oz. cans black beans
- 1 14.5 oz. can chopped tomatoes
- 1 12 oz. can tomato paste
- 15 oz. ricotta cheese
- 2 eggs
- 1/2 c. grated parmesan
- 1/4 c. chopped cilantro (optional)
- 8 oz. shredded pepper jack cheese
Directions
Sauce
- Cook onion in olive oil until brown. Add garlic and cook briefly.
- Add water, black beans, tomatoes and tomato paste. Simmer uncovered for 15 min., stirring occasionally.
Ricotta mixture
- Mix together ricotta, eggs, parmesan. Add cilantro if using.
Lasagna
- Assemble lasagne by alternating layers of noodles, ricotta, sauce and cheese.
- Bake at 350 degrees for 50-60 min.
