Barbecue Burritos

Ingredients

  • 8 oz. pkg. tempeh (we like Soyboy 5-grain tempeh)
  • 1/2 bottle or more barbeque sauce (we like Stubbs Sweet Heat, which uses chipotle chilis)
  • 1 large onion, sliced into long fajita-style strips
  • 1 large red pepper, sliced into long fajita-style strips
  • pkg of 8 12“ tortillas
  • 1/2 lb. or more cheddar cheese, grated
  • guacamole
  • sour cream

Directions

  • Slice the tempeh into 1/4” thick strips. Steam for 2-3 minutes.
  • Marinate the steamed tempeh in the barbeque sauce for 4 or more hours.
  • Bake the tempeh for 20 minutes at 400 degrees in 8“x8” baking dish.
  • Saute the onions and peppers together until well cooked.
  • Put individual ingredients out in bowls so people can make their own burritos.
  • Serves 4.

This is loosely based on the BBQ burritos made by Alto Cinco in Syracuse. We replace the tofu with tempeh, which we feel improves both the flavor and texture.
