Banana Bites
Ingredients
- 3 ripe bananas
- 1 c. finely chopped pitted dates
- 1/4 c. coconut
- 1 3/4 c. oats
- 5 T. olive oil
- 1 t. vanilla
Directions
- Mash bananas in a large bowl. Add the rest of the ingredients and stir to combine. Let rest for 15 minutes at room temperature.
- Preheat oven to 350º F.
- Drop dough by rounded teaspoonfuls onto cookie sheets lined with parchment paper. Bake for 20 min.
