Pumpkin Pineapple Muffins

Ingredients

  • 1 1/2 c. whole wheat flour
  • 3/4 c. oats
  • 1/2 c. sugar
  • 1/3 c. chopped pecans
  • 1 t. baking soda
  • 1 t. baking powder
  • 1 1/2 t. pumpkin pie spice
  • 1 can (8 oz.) crushed pineapple in juice, undrained
  • 1 c. pumpkin puree

Directions

  • Preheat oven to 350º F
  • Mix together dry ingredients (flour, oats, sugar, pecans, baking soda, baking powder) in a large bowl.
  • Mix together the pineapple and pumpkin puree in a small bowl. Pour wet mixture into dry ingredients and stir just until blended.
  • Pour into muffin tins lined with muffin papers and bake for 20 min.
