Pumpkin Pineapple Muffins
Ingredients
- 1 1/2 c. whole wheat flour
- 3/4 c. oats
- 1/2 c. sugar
- 1/3 c. chopped pecans
- 1 t. baking soda
- 1 t. baking powder
- 1 1/2 t. pumpkin pie spice
- 1 can (8 oz.) crushed pineapple in juice, undrained
- 1 c. pumpkin puree
Directions
- Preheat oven to 350º F
- Mix together dry ingredients (flour, oats, sugar, pecans, baking soda, baking powder) in a large bowl.
- Mix together the pineapple and pumpkin puree in a small bowl. Pour wet mixture into dry ingredients and stir just until blended.
- Pour into muffin tins lined with muffin papers and bake for 20 min.
