Mango Chili Lime Muffins
Ingredients
- 2 c. all purpose flour
- ¾ c. whole wheat flour
- ¾ c. brown sugar
- 2 T. lime zest
- 1 t. baking powder
- 1 t. baking soda
- 1 t. chili powder
- ¼ t. salt
- 1 c. soy milk
- ½ c. olive oil
- ¼ c. applesauce
- 1 T. lime juice
- 1 t. egg replacer
- 2 T. water
- 1 can (15 oz.) mango slices, drained and chopped
Directions
- Preheat oven to 400º F
- Mix together the dry ingredients (white flour, whole wheat flour, brown sugar, lime zest, baking soda, baking powder, chili powder, salt) in a large bowl.
- Stir together the wet ingredients (soy milk, olive oil, applesauce, lime juice, egg replacer, water) in a small bowl. Pour into the dry ingredients and stir just until combined. Fold in the chopped mango.
- Pour into muffin tins lined with muffin papers and bake for 20 min.
