Mango Chili Lime Muffins

Ingredients

  • 2 c. all purpose flour
  • ¾ c. whole wheat flour
  • ¾ c. brown sugar
  • 2 T. lime zest
  • 1 t. baking powder
  • 1 t. baking soda
  • 1 t. chili powder
  • ¼ t. salt
  • 1 c. soy milk
  • ½ c. olive oil
  • ¼ c. applesauce
  • 1 T. lime juice
  • 1 t. egg replacer
  • 2 T. water
  • 1 can (15 oz.) mango slices, drained and chopped

Directions

  • Preheat oven to 400º F
  • Mix together the dry ingredients (white flour, whole wheat flour, brown sugar, lime zest, baking soda, baking powder, chili powder, salt) in a large bowl.
  • Stir together the wet ingredients (soy milk, olive oil, applesauce, lime juice, egg replacer, water) in a small bowl. Pour into the dry ingredients and stir just until combined. Fold in the chopped mango.
  • Pour into muffin tins lined with muffin papers and bake for 20 min.
