Gingery Blueberry-Pear Oat Muffins

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup steel cut oats
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup unsweetened applesauce
  • 1/2 cup sugar
  • 1/4 cup maple syrup
  • 3/4 teaspoon fresh grated ginger
  • 3/4 cup blueberries (fresh or frozen)
  • 3/4 cup pear, diced

Directions

  • Preheat oven to 350º F
  • Mix together dry ingredients (flour, oats, baking powder, baking soda, cinnamon, salt) in a large bowl.
  • Mix together wet ingredients (applesauce, sugar, maple syrup, ginger) in a small bowl.
  • Chop pears and wash and drain blueberries.
  • Mix wet ingredients into dry ingredients and stir just until mixed. Carefully stir in pears and blueberries, trying not to puncture the blueberries.
  • Pour into muffin tins and bake for 25 min.
