Gingery Blueberry-Pear Oat Muffins
Ingredients
- 1 1/2 cups flour
- 1/2 cup steel cut oats
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup unsweetened applesauce
- 1/2 cup sugar
- 1/4 cup maple syrup
- 3/4 teaspoon fresh grated ginger
- 3/4 cup blueberries (fresh or frozen)
- 3/4 cup pear, diced
Directions
- Preheat oven to 350º F
- Mix together dry ingredients (flour, oats, baking powder, baking soda, cinnamon, salt) in a large bowl.
- Mix together wet ingredients (applesauce, sugar, maple syrup, ginger) in a small bowl.
- Chop pears and wash and drain blueberries.
- Mix wet ingredients into dry ingredients and stir just until mixed. Carefully stir in pears and blueberries, trying not to puncture the blueberries.
- Pour into muffin tins and bake for 25 min.
